Blood sugar spikes occur when your blood sugar rises and then falls sharply after you eat

Blood sugar, also called glucose, is the primary fuel for our muscles, organs, and brain to work properly. Your body breaks down food into glucose but to use it, it needs to enter our cells for which it needs insulin. While it is completely normal that your glucose does not show the same values at every time of day especially after you eat, rapid changes in blood sugar levels can have severe consequences if they are persistent and recurrent. Which foods cause your glucose to spike is highly individual

How fast your glucose rises after a certain meal is based on many complex factors such as your genes, gut microorganisms, and lifestyle. This differs from person to person.
